Our spin on the traditional lettuce wraps. These are packed full of flavor.
Wright BBQ Lettuce Wraps
1 lb Chicken Breasts
1 head Lettuce of your choice
1/4 to 1/2 C green onions
1/4 to 1/2 C crushed cashews
1/4 C Wright Rub
3 TBS Olive or Vegetable Oil
1/4 water
1/4 C Low Sodium Soy Sauce
1/2 C Wright BBQ Sauce
Separate Lettuce leaves, wash and refrigerate to crisp. Wash and dice
green onions. Cut chicken into bite size pieces; sprinkle with 1/4 C Wright Rub, toss to coat each side, set aside.
Add oil to a large skillet, place on medium/high heat, allow it to heat 1-2 minutes, so that its hot enough to get a sear when you drop the chicken in. Turn the chicken to allow it to sear on each side. Reduce heat to low-med, add 1/4 C water, stir. Cover and continue to cook for 3-5 minutes.
Stir chicken; then add Soy Sauce, Wright BBQ Sauce, Cashews, and Green Onions, stir until blended. Cover and continue to cook for 2 minutes. Remove from heat and serve with lettuce leaves.
*iceberg, green leaf, bibb, or Chinese Cabbage are all great choices for this
